Sandwich Pizza: Two Healthy Recipes in One!

This pizza recipe is so great because it uses the best sandwich ideas to make a delicious homemade pizza that, I think, everyone will love. This recipe is not as involved as was the one I used for making pizza the first time around, but is still just as healthy and tasty.

For me, my best healthy cooking ideas come when I am forced to improvise with what’s available in my kitchen. I feel like I am perpetually low on ingredients, and this week was no exception. The one thing I did know was that I was going to be making pizza.

See, I had a number of pre-made gluten free pizza crusts hanging out in the back of my freezer that I wanted to use up soon. Outside of the crusts and cheese though, I lacked all of the other requisite ingredients needed to make a homemade pizza.

Or so I foolishly thought! The more I looked around at my meager food offerings, the more it dawned on me that I had a lot of my favorite sandwich ingredients available. Then and there, I elected to combine the two ideas to make a sandwich pizza. It’s definitely a pizza recipe off the beaten path, but I think the results speak for themselves…

Recipe: Sandwich Pizza

Summary: This pizza recipe is great because it combines two of my favorite childhood foods

Ingredients:
2 pre-made frozen gluten free pizza crusts
Yellow Mustard
Sriracha Sauce
2–3 tablespoons minced garlic
Dried basil
Dried oregano
15–25 pickle slices
3 veggie burger patties, cubed
2/3-cup broccoli
Colby Jack cheese, shredded
Olive oil

Instructions:
Pre-heat the oven to 375 degrees F.

Place the pizza crusts on a greased baking sheet. On top of the crusts, squirt on yellow mustard and sriracha sauce.

On top of the sauce, evenly distribute the garlic, basil and oregano.

Then, evenly distribute the pickles, veggie burger pieces and broccoli on top of the pizza. Sprinkle cheese over top, and lightly drizzle olive oil over the cheese.

Bake for about 10 to 15 minutes, or until the cheese has all melted and the crust has become crispy.

Quick Notes:
I found the gluten free crusts to understandably be very different from a traditional pizza crust. They look and taste more like flatbread than anything else, although I liked how crispy they became in the oven. However, feel free to use any pre-made or homemade pizza crust for this recipe.
 

Variations:
Try experimenting with your toppings based on what you like best on a sandwich. I think spinach especially would have been a great addition here. Also, Colby jack was just the type of cheese I happened to have on hand at the time, but I think any good melting cheese should be fine for this recipe. To make this recipe dairy free, just sprinkle nutritional yeast over top instead of the cheese.

I was extremely pleased with the result of this homemade pizza. I mean, what’s not to love about a dish that includes tasty sandwich ideas into a pizza recipe? The mustard-sriracha sauce added a spicy zestiness that I liked over a traditional tomato sauce. The pickles brought a bright vinegar flavor to the pizza, and the veggie burgers and broccoli added needed heft. Next time I make this particular homemade pizza I will be using my whole wheat pizza crust recipe, as I think it will stand up better to the strong flavors going on in this dish.
