My gluten free secret allows me to convert most of my favorite recipes into gluten free baked goods. Have you realized that you or a family member is either sensitve to gluten or has Celiacs? More and more people are realizing that their health problems are directly related to what they are eating. Don't worry that all your favorite foods are now off limits because that is not the case.
When I stopped eating grains with gluten which is in most baked goods if it has wheat flour, white flour, rye and a few lesser known flours I was at a loss as to exactly what i could eat. While I tried to feed my family I struggled with not eating what I prepared for them and then I found the secret to converting many of my own favorite recipes.
I have found that xanthan gum gives my baked goods the airy feel very similar to the old gluten containing cookies, cakes, and snack breads. The I went one step farther and started to mix several types of gluten free flours together the create the missing texture, this gave me good results but was messy to be adding 1/3 cup of sorgum flour, 1/3 cup tapicoca flour, and 1/3 cup rice flour along with my 3/4tsp. of xanthan gum, this gave me really good results and I was really excited.
Then I found Bob's Red Mill all-purpose flour which is a premixed combination of garbanzo bean flour, potato starch, tapioca flour, whole grain sweet white sorghum flour, and fava bean flour. This gave me the oppotunity to have an always available mix of gluten free flour ready to do my baking. I missed baking for my family and myself without forcing them to eat gluten free products that, let's face it, just did not taste good.
I have to admit that when I just resently did some Christmas my family liked my peanutbutter kiss cookies better than the old white flour ones. They were moist and without that gritty feel that you sometimes get with gluten free bakery. I have found a gluten free jelly donut recipe that I can not wait to try. I have this feeling we are going to like it!
When you have to change your diet because of a health problem there is nothng more frustrating than having terrible tasting foods or throughing out your food because you just can't even eat it or do you feel like an outcast because your family is enjoyinga tasty meal and your are not.
