Ah delectable confections. What better way to say “je t'aime”? When pondering what I should attempt to make for our Romantic Evening on Feb 14th I couldn't resist trying my hand at my favorite dessert, Profiteroles!
My mom has actually has made these my entire life, however, growing up in the Midwest we referred to these as “Cream Puffs”. No, there is no discernible reason for this. (We also referred to Crepes as “French Pancakes”) Imagine my joy at discovering while traveling in France after college that the French make a tiny delectable version of this childhood favorite of mine.
It doesn’t look too difficult-but I have a stunning assistant, my niece Sophie, just in case it all goes south.
Mom’s Cream Puffs: (aka. Profiteroles)
1/2 Cup Butter
1 Cup Flour
1/4 tsp. Salt
4 Eggs
Melt butter in one cup boiling water, add flour & salt. Mix till it forms a ball.
Remove from heat & cool slightly.
Add eggs one at a time; mix with a spoon till form a ball.
Bake @ 450 degrees form fifteen min on a greased cookie sheet
Then lower to 325 degrees and bake for twenty min more.
Once they cool you can slice in half and fill with your choice of ice cream. Sophie and I picked Dark Chocolate and Butter Pecan.
Of course be sure not to forget the Chocolate Sauce!!
And ... VOILA!!
